    List of Ingredients


    • 1 Esrog
    • 1 cup sugar
    • 1/4 cup water
    • 1 quince apple, peeled and diced
    • 1 tsp. lemon juice


    Instructions


    1. Soak esrog for 1 week, changing water daily. Slice esrog and remove seeds. Place esrog slices in pan with water to cover. Bring to a boil. Drain. Repeat 3-4 times.
    2. In small saucepan, bring sugar and water to a boil. Cook until sugar is dissolved. Pour over esrog, cover pot and let stand at room temperature overnight.
    3. Add quince to esrog, cook for 2-3 hours or until liquid is absorbed (being careful not to burn). Add lemon juice 10-15 minutes before done.


    Final Comments


    Came out really well. i would chop the esrog and quince into smaller peices as they keep their shape and dont get mushy even if its cooked for so long.

    Yield: approximately 10 oz.
