List of Ingredients
- 4 chicken skinless, boneless chicken breasts
- 1/2 medium onion - diced
- 1/2 medium green bell pepper - diced
- 1 can cream of mushroom soup
- 1 can rotel
- 1 cup sour cream
- corn tortillas
- 2 cups grated cheddar cheese - divided
Instructions
- Preheat oven to 350 degrees.
- Cook chicken and shred or dice. *Can use pre-cooked rotissiere chicken for convenience.
- Saute onion and green bell peppers in oil or butter in a pan. Remove from heat.
- Add soup, rotel, sour cream and cooked chicken to pan and mix.
- Prepare a 13x9 baking pan by spraying with nonstick cooking spray.
- Line the bottom of the pan with corn tortillas.
- Pour half of the chicken mixture on top of corn tortillas. Top with 1 cup of grated cheddar cheese.
- Layer with corn tortillas, followed by the chicken mixture and topped with the remaining cheese.
- Bake at 350 for 25-30 minutes.
