    List of Ingredients


    • 4 chicken skinless, boneless chicken breasts
    • 1/2 medium onion - diced
    • 1/2 medium green bell pepper - diced
    • 1 can cream of mushroom soup
    • 1 can rotel
    • 1 cup sour cream
    • corn tortillas
    • 2 cups grated cheddar cheese - divided


    Instructions


    1. Preheat oven to 350 degrees.
    2. Cook chicken and shred or dice. *Can use pre-cooked rotissiere chicken for convenience.
    3. Saute onion and green bell peppers in oil or butter in a pan. Remove from heat.
    4. Add soup, rotel, sour cream and cooked chicken to pan and mix.
    5. Prepare a 13x9 baking pan by spraying with nonstick cooking spray.
    6. Line the bottom of the pan with corn tortillas.
    7. Pour half of the chicken mixture on top of corn tortillas. Top with 1 cup of grated cheddar cheese.
    8. Layer with corn tortillas, followed by the chicken mixture and topped with the remaining cheese.
    9. Bake at 350 for 25-30 minutes.
