    Lowfat Chicken Chimichangas

    List of Ingredients


    • 1 small onion - chopped
    • 3 cloves garlic - minced
    • 1 Tbls. vegetable oil
    • 2 cups salsa, such as Pace
    • 1 1/2 tsp. chili powder
    • 1/2 tsp. cumin (optional)
    • 1 pinch salt
    • 2 1/2 cups of cooked, shredded chicken
    • flour tortillas
    • 1 cup refried beans or cheese


    Instructions


    1. Preheat oven to 450 degrees.
    2. Saute onion and garlic in oil until tender. Stir in salsa, chili powder, cumin and salt. Fold in chicken.
    3. Spread beans and/or cheese on tortilla and top with 1/2 cup of chicken mixture.
    4. Fold top and bottom of tortilla toward the center and roll up sides. Spray all sides of tortilla with cooking spray.
    5. Place in a 13X9 baking dish, seam side down.
    6. Bake in 450 degree oven for 20-25 minutes, until brown and crisp. Turn halfway through.
