Lowfat Chicken Chimichangas

List of Ingredients
- 1 small onion - chopped
- 3 cloves garlic - minced
- 1 Tbls. vegetable oil
- 2 cups salsa, such as Pace
- 1 1/2 tsp. chili powder
- 1/2 tsp. cumin (optional)
- 1 pinch salt
- 2 1/2 cups of cooked, shredded chicken
- flour tortillas
- 1 cup refried beans or cheese
Instructions
- Preheat oven to 450 degrees.
- Saute onion and garlic in oil until tender. Stir in salsa, chili powder, cumin and salt. Fold in chicken.
- Spread beans and/or cheese on tortilla and top with 1/2 cup of chicken mixture.
- Fold top and bottom of tortilla toward the center and roll up sides. Spray all sides of tortilla with cooking spray.
- Place in a 13X9 baking dish, seam side down.
- Bake in 450 degree oven for 20-25 minutes, until brown and crisp. Turn halfway through.
