    Chicken Penne in Smoky Chili Cream Sauce

    List of Ingredients


    • 12 ounces of uncooked penne pasta
    • 1 1/2 Tbls. vegetable oil
    • 1 lb. boneless, skinless chicken breast, cut into small chunks
    • 1/2 cup chopped onion
    • 1 tsp. garlic - minced
    • 2 cups of prepared Alfredo sauce (Bertolii makes a good one)
    • 1 Tbls. chipolte in adobe sauce (may have to adjust to taste)
    • 2 tsp. chili powder
    • 2 tsp. maple syrup
    • 1/2 tsp. salt
    • 8 slices fully cooked bacon - chopped
    • 2 Tbls. chopped fresh cilantro


    Instructions


    1. Cook penne pasta following package directions.
    2. While penne is cooking, heat oil in a large skillet over medium-high heat and cook chicken for about 4 min. or until cooked through. Remove to a plate and reserve.
    3. Reduce heat to medium. Add onion to the skillet and cook for 3 minutes, stirring occasionally. Add garlic and cook 30 seconds. Stir in alfredo sauce, chipolte, chili powder, maple syrup and salt. Cook over medium-high heat until bubbly.
    4. Stir in chicken.
    5. Spoon sauce over pasta and serve.
