Chicken Penne in Smoky Chili Cream Sauce

- 12 ounces of uncooked penne pasta
- 1 1/2 Tbls. vegetable oil
- 1 lb. boneless, skinless chicken breast, cut into small chunks
- 1/2 cup chopped onion
- 1 tsp. garlic - minced
- 2 cups of prepared Alfredo sauce (Bertolii makes a good one)
- 1 Tbls. chipolte in adobe sauce (may have to adjust to taste)
- 2 tsp. chili powder
- 2 tsp. maple syrup
- 1/2 tsp. salt
- 8 slices fully cooked bacon - chopped
- 2 Tbls. chopped fresh cilantro
Instructions
- Cook penne pasta following package directions.
- While penne is cooking, heat oil in a large skillet over medium-high heat and cook chicken for about 4 min. or until cooked through. Remove to a plate and reserve.
- Reduce heat to medium. Add onion to the skillet and cook for 3 minutes, stirring occasionally. Add garlic and cook 30 seconds. Stir in alfredo sauce, chipolte, chili powder, maple syrup and salt. Cook over medium-high heat until bubbly.
- Stir in chicken.
- Spoon sauce over pasta and serve.
