    List of Ingredients


    • 3 medium potatoes
    • 2 large carrots finely chopped
    • 1 onion dhopped
    • 1/2 teaspoon of dried thyme
    • 1 lb of boneless chicken breast
    • 3 cups fesh spinach, coarsely chopped
    • 1/2 cup part skim ricotta cheese
    • 1/2 teaspoon salt


    Instructions


    1. boil potatoes
    2. set oven to 375 litly coat a heavybottomed skillet with cooking spray and place over medium heat
    3. add carrots, onion and thyme - cook until lightly browned
    4. add chicken and cook until golden browned
    5. turn off heat and add ricotta, spinach and salt
    6. drain potatoes and return to the pot - add olive oil, milk, and salt mash until smooth
    7. place chicken mixture in a 9 inch baking pan and top with mashed potatoes, bake for 15 minutes - to brown potatoes broil for an additional 5 minutes
