List of Ingredients
- 3 medium potatoes
- 2 large carrots finely chopped
- 1 onion dhopped
- 1/2 teaspoon of dried thyme
- 1 lb of boneless chicken breast
- 3 cups fesh spinach, coarsely chopped
- 1/2 cup part skim ricotta cheese
- 1/2 teaspoon salt
Instructions
- boil potatoes
- set oven to 375 litly coat a heavybottomed skillet with cooking spray and place over medium heat
- add carrots, onion and thyme - cook until lightly browned
- add chicken and cook until golden browned
- turn off heat and add ricotta, spinach and salt
- drain potatoes and return to the pot - add olive oil, milk, and salt mash until smooth
- place chicken mixture in a 9 inch baking pan and top with mashed potatoes, bake for 15 minutes - to brown potatoes broil for an additional 5 minutes
