    List of Ingredients


    • 4 twelve inch spinach flour torilla wraps
    • 2 cups hummus
    • 2 hearts or romaine lettuce, chopped
    • 1 cup crumbled feta cheese
    • 1/4 cup sundried tomatoes, chopped
    • 3 tablespoons chopped mint
    • 1/2 cup fresh flat leaf parsley leaves
    • 1/2 cup pitted kalamata black olives, chopped
    • 1/4 seedless english cucumber
    • 1/2 medium red onion, chopped
    • 1 1/2 tablespoons red wine vinegar
    • 3 tablespoons extra virgin olive oil
    • salt and pepper to taste


    Instructions


    1. warm torillas in a non stick skillet for 15 seconds on each side - cool to handle
    2. spread each wrap with 1/2 cup of hummus
    3. toss remaining salad ingredients in a bown and dress with vinegar, oil, salt and papper
    4. pile salad on hummus, tuck in sides of rwap and roll
