List of Ingredients
- 4 twelve inch spinach flour torilla wraps
- 2 cups hummus
- 2 hearts or romaine lettuce, chopped
- 1 cup crumbled feta cheese
- 1/4 cup sundried tomatoes, chopped
- 3 tablespoons chopped mint
- 1/2 cup fresh flat leaf parsley leaves
- 1/2 cup pitted kalamata black olives, chopped
- 1/4 seedless english cucumber
- 1/2 medium red onion, chopped
- 1 1/2 tablespoons red wine vinegar
- 3 tablespoons extra virgin olive oil
- salt and pepper to taste
Instructions
- warm torillas in a non stick skillet for 15 seconds on each side - cool to handle
- spread each wrap with 1/2 cup of hummus
- toss remaining salad ingredients in a bown and dress with vinegar, oil, salt and papper
- pile salad on hummus, tuck in sides of rwap and roll
