    Triple Crown Pie

    From the Wayside Inn in Virginia

    Pastry:
    2 cups flour
    1/2 teaspoon salt
    2/3 cup shortening
    4-5 tablespoons ice water

    Cut in fat with pastry blender as soon as well coated with flour. Rub with fingertips until mixture looks like fine crumbs. Make a well in the center. Pour in 4 tablespoons water and mix quickly with a knife and add more water if necessary to give a firm, not sticky, dough.

    Filling:
    3 eggs
    1/3 cup sugar
    1/2 teaspoon salt
    1/3 cup butter or margarine, melted
    1 cup light corn syrup
    1 cup pecan halves or broken pecans
    1 cup of chocolate chips

    Heat oven to 375 degrees.
    Prepare pastry.
    Beat eggs, sugar, salt, butter and syrup with rotary beater.
    Cover bottom pie shell with pecans and chocolate chips.
    Pour syrup over nuts and chocolate chips.
    Bake 40-50 minutes or until filling is set.
