    Lemon Ginger Scallops

    2 lbs scallops
    1 cup lemon juice
    6 cloves garlic, minced
    4 tsp grated fresh ginger
    1 tsp lemon extract

    Marinate scallops for at least 2 hours. Pat dry and coat with the following. Reserve marinade.

    1 cup flour
    2 tsp ground ginger
    3/4 tsp paprika
    1/2 tsp salt
    1 tsp pepper

    Pan fry 1 minute each side on high heat in 2 tsp oil.

    1/4 cup chicken broth
    1/4 cup brown sugar

    Put scallops in baking dish with reserved marinade and broth. Top with brown sugar. Bake scallops 20 minuts at 350 degrees.
