Armenian Meat Loaf
List of Ingredients
- 2 pounds fresh spinach, or 2 (10 oz. packages) frozen chopped spinach
- 1 pound ground round
- 3/4 cup finely chopped onions
- salt and freshly ground pepper to taste
- 1/2 teaspoon grated nutmeg
- 1/4 teaspoon cinnamon
- 1 cup cooked rice
- 3 bacon slices
Instructions
- Preheat the oven to 350°f.
- If fresh spinach is used, rinse it well in several changes of cold water. Drain, place in a pot and cook in only the water that clings to the leaves. Chop well. If frozen spinach is used, just defrost it and squeeze out excess moisture.
- Combine the spinach, beef, onions, salt, pepper, nutmeg, cinnamon, rice and eggs. pack the mixture into a buttered 9x5 inch loaf pan. Arrange the bacon on top. Bake for 1 hour or until firm. Serve with a tomato sauce.
