Chicken In Creamy Onion Sauce
List of Ingredients
2 skinless boneless chicken breasts, lightly pounded
2 onions, finely chopped
1/4 cup butter, divided
2 tbsp all-purpose flour
1 ½ cups milk
½ cup whipping cream
2 tbsp Dijon or grainy mustard
4 cups prepared long grain and wild rice Recipe
In frying pan, cook the chicken breasts in 2 tbsp butter until lightly browned on both sides. Set aside. In the remaining butter gently cook the onions until softened. Add flour, cook and stir for 1 minute. Gradually add milk, stirring all the time until mixture thickens and comes to a boil. Stir in cream and mustard. Season to taste with salt and pepper. Return chicken to pan; simmer mixture for 10 to 15 minutes or until chicken is cooked. Serve with the prepared rice and garnish as desired.
