    Orange-Bourbon Chicken

    4 skinless boneless chicken breasts
    6 Tbsp. Butter
    salt and pepper to taste
    12 oz. orange juice concentrate, thawed
    6 tsp. Bourbon whiskey
    1/2 cup chopped toasted pecans,

    Preheat oven to 425°. Melt the butter in an iron skillet. Add the chicken to the butter, coating well. Season the chicken. Bake the chicken for 25 minutes or until done.

    Take the chicken out of the oven and remove the chicken to a warm platter. Add the orange juice concentrate to the butter drippings in the skillet. Reduce over high heat by about 1/3. Add the bourbon and salt and pepper to taste. Put the chicken back in the sauce to heat through. Sprinkle with the pecans and serve.
