    Italian Spinach Pasta Salad

    Salad Ingredients:

    2.5 oz. fresh spinach leaves, washed and patted dry
    8 oz. linguine, cooked at dente and cooled to room temperature
    6 oz. provolone cheese, cut into julienne strips
    5 oz. pepperoni, thinly sliced
    1 red onion, thinly sliced
    1 red bell pepper, cut into julienne strips
    1 medium zucchini, sliced or cut into julienne strips
    Black olives, preferably Calamata

    Dressing Ingredients:

    1 medium clove garlic, finely minced
    1/2 cup red wine vinegar
    6 Tbsp olive oil
    3/4 tsp salt
    Freshly ground pepper
    1/2 cup fresh parsley
    1/2 tsp dried oregano, or 1 tsp fresh oregano leaves
    1 tsp minced fresh basil or 1/2 tsp dried basil

    Directions:

    In a small bowl or the work bowl of a food processor, combine minced garlic and vinegar. Add oil, salt, pepper and herbs; combine.

    In a large bowl, combine salad ingredients. Add dressing and toss gently to coat. Serve immediately.
