Louisiana Rice Salad
4 cups cooked rice
2 green peppers, chopped
1 bunch green onions, chopped
16 oz can red beans
1/2 cup olive oil
1/2 cup vinegar
1/2 cup water
4 teaspoons paprika
4 teaspoons prepared horse radish
salt and pepper to taste
Mix the rice, bell peppers, green onions, and red beans. In another bowl combine the oil, vinegar, water, horse radish, and spices. Pour over the rice salad and toss. Serve cold.
