Punched Up Potato Salad

This is a super summertime dish that works well with barbeques. However, in the middle of winter, when you've forgotten about a bag of potatoes that's now growing eyes, get ready to use them up!
Serves 6 - 10
Ingredients:
10 medium potatoes, washed, cut into bites-sized pieces, boiled for 12 minutes
1/4 cup Italian dressing
2 hard boiled eggs
5 strips bacon, cooked and crumbled
1 tablespoon brown mustard
1 cup mayonnaise
1/4 cup fresh minced parsley
1/4 cup finely minced celery (about 1 stalk)
1 medium onion, finely minced
1 large red bell pepper, minced
1/2 - 1 teaspoon Final Experiment HOT, HOT Sauce or other very HOt sauce
1 teaspoon poppy seed
2 tablespoons sweet pickle relish
Directions:
In a very large bowl combine all ingredients except potatoes, hard boiled eggs and poppy seed and mix well. Add potatoes and coat well (try to leave the potatoes in chunks). Garnish with slices of hard boiled eggs on top. Sprinkle with poppy seed.
