    Green Beans with Tomatoes and Bacon

    List of Ingredients




    4 slices bacon, cut into 1-inch pieces
    1 cup finely chopped onions
    1 pound green beans, trimmed, cut into 1 1/2-inch lengths
    1 cup chicken broth
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    4 medium plum tomatoes, chopped into 1/2-inch pieces

    In a large pan, cook the bacon over medium heat, stirring often, until crisp, about 5 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain, leaving the bacon fat in the pan.

    Add the onions to the pan and cook, stirring often, until lightly browned, about 6 minutes. Stir in the beans, broth, salt and pepper; bring to a boil. Reduce the heat to medium-low and simmer, covered, until the beans are very tender, about 35 to 40 minutes.

    Add the tomatoes and bacon and continue cooking 5 minutes.
