    A chunky soup for those cold winter nights.


    List of Ingredients


    • One Gammon Joint either smoked or unsmoked (I prefer the smoked)
    • 1 large onion
    • 1 Leek
    • 2 Vegetable Stock Cubes
    • 150g Pearl Barley
    • 150g red Lentils
    • 100g Yellow Split Peas
    • 2 litres of water
    • 1 clove of garlic
    • salt and pepper
    • 2 tins of mixed vegetables
    • Crusty Bread to serve


    Instructions


    1. Boil the gammon for approx 4 hours until its starting to fall apart from the main joint, keep topping the water in pan up.
    2. Take out the gammon and cover in kitchen foil
    3. Chop the onion, leek and crush the garlic
    4. Add Pearl Barley, Yellow Split Peas and red Lentils to the pan and simmer for an hour, stirring occassionally
    5. Add onion, leek and crushed garlic along with vegetable stock cubes to the pan
    6. Take 2 forks and start shredding the gammon, add to the ingredients in the pan (its optional how much gammon you put in)
    7. Add mixed vegetables simmer for 10 mins
    8. Add salt and pepper to season, serve with crusty bread


    Final Comments


    I'd been making soup for a while, and thought I would try a new concoction, and this soup is a result of it. Everybody that has tasted it has loved it, if you try it let me know what you think
