The great thing about this is that if there are leftovers.put them in the refrigerator overnight; it will reallythicken up and then makes an excellent side dish. Onepiece of info, if you are a salt addict like myself, youwill want to add plenty after it's done. However, myhusband is not and didn't add a thing.

2 tblsp butter
2 tblsp extra virgin olive oil
1 onion finely chopped
1/2 lb. Fresh mushrooms sliced
1.5 tblsp dried basil
1 teaspoon dried sage
1/2 teaspoon dried pepper
1 can (15 oz) tomatoes w/ juice
3.5 cups water
1/2 cup rice
Melt butter w/oil in a pot. Stir in onion and sauté until soft, 6 to 7 min. Add mushroom, basil, sage and pepper. Cook
another 5 min, stirring frequently. Stir in tomatoes and
cover. Cook 10 min.Add water to pot and bring to
a boil. Add rice, combine well, cover and simmer.
(If you use Arborio rice you will need to stir
frequently.) Cook until rice is done, about 20 min.
