Eggplant Parmesan

List of Ingredients
- 1 large eggplant, sliced
- 1 cup flour
- 1 cup water
- 1 egg
- 4 ounces Parmesan cheese
- 1 small jar Ragu spaghaetti sauce
- 1 teaspoon salt
Instructions
- Mix flour, egg, salt and water in bowl. Dip eggplant in flour mixture coating well. Fry in deep fat (oil) until brown. Place a layer of eggplant in deep casserole dish. Sprinkle with layer of Parmesan, then layer of Ragu sauce. Repeat layering until all eggplant (almost all) Parmesan and Ragu are used up,ending with layer of Ragu on top. Sprinkle with parmesan on top. Bake at 350 for 30 to 45 minutes. Serves 4.
