Roasted Garlic Asiago Dip

1 medium-to large head of garlic
{Not elephant Garlic}
2 {8oz.} packages cream cheese, softened
2 cups Asiago cheese 1/3 cup heavy cream
1/2 cup sour cream
1/4 cup parsley
1/2 cup shredded mozzarella cheese
Recipe
Preheat the oven to 400
Cut the garlic head in 1/2, place the cut sides down, on parchment paper or foil lined baking sheet and roast for 40-45 minutes, or until tender. {I would check after 30 minutes} Remove the garlic cloves from their skins.
Reduce the oven temperature to 350.
With a food processor or electric mixer, blend the cream cheese, Asiago cheese, heavy cream, sour cream, garlic cloves and parsley till blended. Place mixture into a casserole or baking dish and top with the shredded mozzarella cheese. Bake for 20 minutes or until bubbly and golden brown on top.
Serve with crusty bread, crackers or other dippers of your choice
