    2 broiler-fryer chickens (2-1/2 pounds each), cut into pieces
    1 cup flour
    2 teaspoons salt
    1/4 teaspoon pepper
    2 teaspoons paprika
    2 eggs, slightly beaten
    3 tablespoons milk
    1-1/3 cup Parmesan cheese, grated
    2/3 cup dry bread crumbs
    2 tablespoons butter or margarine
    2 tablespoons shortening
    1/4 cup butter or margarine, melted

    Recipe



    Heat oven to 400°. Do not use chicken wings. Remove skin from remaining pieces. Salt chicken. Coat chicken with a mixture of flour, 2 teaspoons salt, the pepper and paprika. Combine eggs and milk; dip chicken into mixture. Then roll chicken in mixture of cheese and bread crumbs.

    In oven, melt 2 tablespoons butter and shortening in jelly roll pan, 15-1/2" x 10-1/2" x 1". Place chicken bone-side down in pan. Drizzle with melted butter. Bake one hour. Serve hot or cover and chill. Makes six servings.
