ROSEMARY CHICKEN WITH POTATOES

3-4 lbs. cut up chicken
2-3 lbs. potatoes chunked/skins, cut in
2-bite pieces
1 lge. onion, sliced
2 T. olive oil
6 lge. garlic cloves, minced
1 T. dried or fresh Rosemary
2 tsp. onion powder
1 tsp. salt
1/2 tsp. pepper
Recipe
Place chicken, skin side up, in large roasting pan. Toss potato chunks in olive oil and fit between chicken pieces. Drizzle any left over oil over chicken. Sprinkle dry spices over chicken and potatoes and distribute minced garlic evenly over all then top with onion slices. Bake for 1 hour at 350 degrees, basting once or twice during last 1/2 hour.
