    Pumpkin Maple Cream Cheese Muffins


    List of Ingredients


    • 2 c. flour
    • 3/4 c. brown sugar, packed
    • 1/2 c. chopped walnuts
    • 2 tsp. baking powder
    • 1 tsp. cinnamon
    • 1/2 tsp. baking soda
    • 1/4 tsp. salt
    • 2 eggs
    • 1 c. canned pumpkin
    • 3/4 c. evaporated milk
    • 1/4 c. vegetable oil
    • 2 tsp. maple flavoring
    • CREAM CHEESE FILLING:
    • 4 oz. cream cheese, softened
    • 2 TBS. packed brown sugar
    • 1-1/2 tsp. maple flavoring
    • NUT TOPPING:
    • 2 TBS. packed brown sugar
    • 1/4 c. chopped walnuts


    Instructions


    1. Preheat oven to 400 degrees.
    2. Combine dry ingredients in large mixing bowl. Mix remaining ingredients in medium bowl; add to flour mixture until just blended.
    3. Spoon into 12-16* greased muffin cups. Combine ingredients for the cream cheese filling and drop 1 heaping teaspoon of the filling into the center of each cup, pressing down slightly into batter.
    4. Combine the nuts and brown sugar to make the nut topping and sprinkle the topping over the muffins.
    5. Bake for 20-25 minutes or until toothpick comes out clean. Cool in pan for 5 minutes.


    Final Comments


    * This recipe claimed to make a dozen muffins, but I find that it makes more than 12. 15 or 16 is about what I get, and I use standard size muffin pans.
