Recipe Introduction
List of Ingredients
- 1 (5 pound) bag of potatoes
- 1 (8 ounce) box of cream cheese, softened
- 1 (8 ounce) container of sour cream
- 1 teaspoon of salt
- 1/4 teaspoon of pepper
- 2 tablespoons of margarine
- 1 cup of cheddar or Velveeta cheese, shredded
- 1 or 2 tablespoons of additional margarine
- 1/2 cup of additional cheddar cheese
Instructions
- Peel and dice potatoes. Cook in boiling, salted water until tender. Drain well.
- In a large bowl, mash the potatoes. Add the cream cheese, sour cream, 2 tablespoons of margarine, and seasonings. Beat until smooth and fluffy.
- Stir in the cheddar cheese.
- Spoon potato mixture into a lightly greased casserole dish and top with dots of additional margarine.
- Bake, covered, at 350F for 30 minutes.
- Sprinkle with additional cheese, if desired, and allow the cheese to melt.

You may make this ahead of time, refrigerate, and bake just before serving.
