    ANGEL CAKE, MINTED

    Recipe Introduction

    List of Ingredients


    • 1 angel food cake
    • 21/4 C. miniature marshmallows
    • 1/2 C. milk
    • 1/4 C. white or green creme de menthe
    • 1/4 t. salt
    • 4-6 drops of green food coloring
    • 1 pint whipping cream
    • 1 packet (1oz.) pre-melted unsweetened chocolate.


    Instructions


    1. Split cake into 3 equal parts, horizontally.

    2. Heat marshmallows and milk over medium heat, stirring occasionally until melted, about 5 minutes.

    3. Remove from heat, cool at room temp. until thickened (20-25 minutes).

    4. Stir in creme de menthe, salt and food coloring.

    5. Beat whipping cream in chilled mixer bowl until stiff peaks form. Fold in marshmallow mixture.

    6. Stack cake layers frosting each with 1 C. of filling. Frost sides with remaining filling.

    7. Drizzle chocolate around top edge of cake allowing it to run down sides. Chill.



    Final Comments


    To soften chocolate. place packet in bowl of warm water while preparing frosting.
