CHICKEN FAJITAS, EASY
List of Ingredients
- 1 1/2 lbs (8) boneless chicken breasts
- 1 T. oil
- 1/2 green pepper, chopped
- 1/2 onion, chopped
- 1 pkg. fajita seasonings
- 1 dozen 8-inch tortillas
- 1/2 pint sour cream
- black olives (opt.)
- 2 C. shredded cheese
- Picante sauce
Instructions
- Marinate chicken in fajita seasonings and oil, drain
- Cut chicken into bite sized pieces and saute in skillet with oil.
- Add green pepper and onion. Simmer covered until veg. are tender, stirring occasionally.
- Spread each tortilla with 1 T. sour cream, top with 2-3 T. chicken mixture and sprinkle with olives and cheese to taste.
- Wrap individually in foil or freezer wrap, or store in a covered plastic container to freeze.
- To serve, thaw in microwave oven 3 minutes; heat on high for 2 minutes.
- Top with Picante sauce.
