BANANA CREAM PIE

List of Ingredients
- Bananas
- 3/4 C. sugar
- 2 T. flour
- 2 T. cornstarch, not packed
- 1/4 t. salt
- 2 C. milk
- 2 eggs
- 1 t. vanilla
- -----Meringue:
- 2 egg whites
- 1/4 t. cream of tartar
- 1/4 C. sugar
- 1/4 t. vanilla
Instructions
- Slice bananas to cover bottom of baked crust
- Combine sugar, flour, cornstarch and salt, blending well.
- Add scalded milk. Cook over low heat until very thick.
- Just before removing from stove, stir in well beaten egg yolks.
- Add vanilla.
- Pour cream filling over bananas
- Beat meringue ingredients until stiff peaks form. Spread over filling.
- Bake at 350 degrees 8 - 10 minutes.
Final Comments
Variation: add 1/2 - 1 C. shredded coconut instead of bananas for Coconut Cream Pie.
