    WILD RICE

    Judy Meinholdt's, good substitute for potatoes


    List of Ingredients


    • 1 C. uncooked wild rice (I used a small box of Uncle Ben's long and wild rice)
    • 2 T. green onion, chopped
    • 1 (8 oz) can mushroom stems, drained
    • 3 C. chicken broth or water/bullion
    • 1'4 C. oleo


    Instructions


    1. Melt butter, add rice and flavor packs, onions and mushrooms.
    2. Cook and stir 15 - 20 minutes.
    3. Stir in rice mixture. Cover tightly for 1 1/2 hours or until moisture is absorbed in preheated oven at 325 degrees.
