    BEEF, OVEN STEW


    List of Ingredients


    • 2 lbs. beef stew meat, trimmed
    • 4 med. potatoes, cut into 1" chunks
    • 6 med. carrots, cut into ½ " chunks
    • 1 medium onion, chopped
    • 2 C. tomato juice
    • 1 C. water
    • 3 T. quick-cooking tapioca
    • 1 t. sugar
    • 2 t. salt
    • 1/2 t. black pepper


    Instructions


    1. Preheat over to 350 degrees.

    2. Coat a 9X13 baking dish with cooking spray.

    3. In baking dish combine beef, potatoes, carrots and onion, mix well.

    4. Combine tomato juice, water, tapioca, sugar, salt and black pepper. Pour over the beef and vegetables.

    5. Cover tightly with foil and bake for 2 - 2 1/4 hours or until the beef and vegetables are tender.



    Final Comments


    Note: This is a perfect dish for a make-ahead dinner. Just put it together, cover and chill. Start baking it 2 1/2 - 3 hours before serving.
