    Shannon Greer gave me a shortcut version to the chicken and gravy and I can't afford to ever lose it!

    List of Ingredients




    4 chicken breasts (microwave ok)
    I prefer to stir fry the chicken or boil

    Gravy:
    2 cubes butter
    1 cup flour
    2 cans chicken broth (regular soup size cans)
    1 can cream of chicken soup

    When chicken and gravy is cooked you will need:
    cooked rice
    Chinese crunchy noodles
    celery, chopped
    slivered almonds
    chopped tomatoes
    cocount
    chopped green onion
    chopped green peppers
    pineapple chunks
    grated cheddar cheese

    After you cook chicken (and my SIL uses deli rotisserie chicken) cut up and set aside.

    Stir butter over med heat and add flour. Mix and cook until smooth like a roux.
    Add the two cans chicken broth and the 1 can cream of chicken soup.
    Whish and stir to a boil. cook until thick and bubbly.
    Add chopped cooked chicken.
    Remove and put in a large serving dish.
    Everybody stacks their own food, usually starting with rice, then chicken gravy mix, then crunchy chinese noodles, then a little more chicken mix, then tomatoes, green things, almonds, coconut and cheese...however you want. It is a beautiful and filling dish.
