Funeral Potatoes (Utah potatoes)

Recipe Introduction
These are called Funeral potatoes in Utah and that name has spread. I called them "those potatoes" after having them at a church dinner and getting the recipe from Joan (JoAnn).
Some people ahve made them with shortcuts but they aer not good with frozen hash browns.
List of Ingredients
6-8 boiled potatoes, with skins
1/4 cup butter
1 can cream of chicken soup
1/2 pint sour cream
1/3 cup green onions, chopped
1/2 cup cheddar cheese, grated
1/4 cup cornflakes, crushed
2 T. melted butterRecipe
Grate the cooled, peeled potatoes. Heat 1/4 cup butter witht he soup. Blend the sour cream, onions, and cheese with the soup mixture. Stir mixture into potatoes. Add more soup or cream as needed. (I never have.) Place in a buttered 9x13 pan. Mix the crushed cornflakes with the 2 T. butter and sprinkle over the top of the potatoes. Bake at 350*F. for 30-45 minutes.
Great served with roast beef, turkey or ham!
