Apple Spiced Sweet Potatoes

List of Ingredients
- 3.5 to 4 pounds sweet potatoes, peeled and cut into 2" chunks
- 1 can (19 or 20 oz) apple pie filling
- 2/3 cup golden raisins (not when I cook it!!)
- 3 tbsp butter, cut up
- 1 1/2 tsp apple pie spice (I just sprinkled some cinnamon, nutmeg, cloves in)
- 1 cup coarsely chopped pecans
- 1/3 cup sugar
- 2 tbsp sugar
Instructions
- Lightly coat a 3.5 to 4 quart slow cooker liner with cooking spray.
- Add sweet potato chunks, apple pie filling, raisins, 3 tbsp butter and applie pie spice. Stir gently.
- Cover and cook on low-heat setting for 6-8 hours, or on high-heat for 3-4 hours.
- meanwhile, for candied pecans, in a large heavy skillet, combine pecans, sugar and butter. cook and stir over medium heat for 8 to 10 minutes - or until sugar mixtue turns golden and starts to melt.
- Pour nut mixture onto large piece of foil to cool completely. When cool, crush nut mixture coarsely.
- To serve, top potatoes with candied pecans.
- Makes 10 servings.
