Very Special Lemon Mini Muffins

List of Ingredients
- 1 cup butter
- 1 cup sugar
- 4 egg yolks, well beaten
- 1/2 cup lemon juice
- 2 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 4 egg whites, stiffly beaten
- 2 tsp grated lemon peel
Instructions
- Preheat oven to 375
- Combine sugar and butter. Cream until smooth.
- Add egg yolks and beat well.
- Sift together dry ingredients.
- Add alternately to creamed mixture with lemon juice, mixing well after each addition. DO NOT OVERMIX
- Fold in egg whites and lemon peel.
- Fill greased mini muffin pan 3/4 full and back 18-20 minutes

Makes 5 dozen mini muffins
