Chicken Cheese Fiesta

List of Ingredients
- 1/2 cup water, divided
- 1 pkg taco seasoning
- 1 tbsp olive oil
- 1 lb skinned and deboned chicken, cut inot bite size pieces
- 16 oz jar salsa
- 12 oz shredded cheddar cheese
- 1 can chopped green chilies
- 1 large egg
- 1/2 tsp salt
Instructions
- Combine 1/4 cup water, taco seasoning and oil in heavy duty ziploc bag. Mix well.
- Add chicken pieces, seal bag and shake to coat.
- Chill at least 5 minutes or up to 12 hours.
- Cook chicken and marinade in large, hot non-stick skillet over medium heat, stirring often until chicken is done.
- Stir together 1/2 cup salsa and remaining 1/4 cup water in a loaf pan until well blended.
- Spread chicken evenly over bottom of dish.
- Stir together cheese, remaining salsa, green chilies, egg and salt.
- Pour over chicken
- Bake at 350F for 20-25 minutes.
- Serve with chips or make into enchiladas.
