    Chicken Cheese Fiesta

    List of Ingredients


    • 1/2 cup water, divided
    • 1 pkg taco seasoning
    • 1 tbsp olive oil
    • 1 lb skinned and deboned chicken, cut inot bite size pieces
    • 16 oz jar salsa
    • 12 oz shredded cheddar cheese
    • 1 can chopped green chilies
    • 1 large egg
    • 1/2 tsp salt


    Instructions


    1. Combine 1/4 cup water, taco seasoning and oil in heavy duty ziploc bag. Mix well.
    2. Add chicken pieces, seal bag and shake to coat.
    3. Chill at least 5 minutes or up to 12 hours.
    4. Cook chicken and marinade in large, hot non-stick skillet over medium heat, stirring often until chicken is done.
    5. Stir together 1/2 cup salsa and remaining 1/4 cup water in a loaf pan until well blended.
    6. Spread chicken evenly over bottom of dish.
    7. Stir together cheese, remaining salsa, green chilies, egg and salt.
    8. Pour over chicken
    9. Bake at 350F for 20-25 minutes.
    10. Serve with chips or make into enchiladas.
