remember - it's most important to cube things whenever possible - like the chicken
List of Ingredients
- 1/4 cup butter
- 1 cup chopped onion
- 2 cloves garlic, crushed
- 1 1/2 cups stewed tomatoes (preferably done yourself but in a pinch you could use a 28 oz can)
- 1 1/2 cups long grain rice
- 1 tsp basil
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp cayenne
- 1 tsp soup mix
- 1/2 cup chopped green pepper
- 1/2 cup sliced celery
- 1/4 cup dried parsley
- 1 lb shrimp (uncooked)
- 3 chicken breasts cooked & cubed
- 6 sliced mushrooms
Instructions
- Heat butter in tight, fully covered saucepan
- Add onion and garlic
- Cook over low heat for 5 minutes.
- Add tomatoes and juice, bring to boil.
- Sprinkle rice on top of tomatoes.
- Add salt, pepper, cayenne, and soup mix.
- Cook 15 minutes.
- Add green pepper, celery, parsley and basil. If necessary, add a little water or tomato juice.
- Cook 5 minutes
- Transfer to casserole dish
- Add shrimp, mushrooms, chicken and juices
- Cover tightly.
- Bake in preheated oven for 15 minutes at 350 degrees until shrimp ar cooked but not overdone
