Recipe Introduction
When I found this recipe, there was lots of discussion about how dangerous it is to boil an unopened can for such a period of time, so be warned. I haven't had any issues, but I've also been careful to get cans that aren't dented or damaged in any way.
I'm also posting the recipe as I found it and will put my own comments at the bottom.
List of Ingredients
graham cracker crust
1 can Eagle Brand sweetened condensed milk (about 14oz)
16 oz cream cheese (2 packages)
1 tsp vanillaRecipe
Step one: (preferably the night before) Place an UNOPENED can of sweetened condensed milk in a pan of water (remove the label and cover the can with water) and bring to a boil....boil for 2 1/2 hours checking variously to be certain the water level doesn't fall more than 1/4 inch
or so below the top of the can. Allow the can to cool in the water after boiling.
Step two: Remove the cream cheese from the refrigerator, place unwrapped in a mixing bowl and allow to come to room temperature. Open the carmelized milk and scrape the contents into the bowl with the cream cheese. NOTE:Resist ALL urges to eat the caramel now, it gets better, I promise!
Add the vanilla extract and mix these ingredients with a mixer.
Scrape the filling into the waiting crust.
Place in refrigerator and allow to chill for 1 or 2 hours.
Prepare to die!

- the original recipe calls for a 14oz can of sweetened condensed milk. I think that is only available in the US, so I've always just used 1 regular sized can.
- I also always make this into mini-tarts with a graham cracker crust. I find one batch of this makes approximately 4 dozen mini-tarts.
- when boiling the can, place the can on its side - otherwise the bubbles from the boiling water cause the can to rock around and makes a lot of noise
- there are other methods for cooking the caramel that include microwaving the sweetened condensed milk in a microwave safe bowl, or using a crockpot (just pour sweetened condensed milk into crockpot) - not sure how long this might take though
