Pockets of Lemon Cake

List of Ingredients
- 1 box white cake mix (2 layer size)
- 4 egg whites
- 1 1/4 cups water
- 1/3 cup oil
- 1 can lemon pie filling (or make lemon pie filling from box)
- Icing:
- 1 can Lemon supreme frosting *see notes below*
- 8oz container Cool Whip
Instructions
- Preheat oven to 350 degrees. Grease 9x13 pan.
- Mix cake mix, egg whites, oil, water according to directions on the cake mix box.
- Spread batter into prepared cake pan.
- Drop pie filling by heaping teaspoonfuls over top of cake batter.
- Bake 30 to 40 minutes or until edges pull away from side of pan and top is golden brown.
- Cool cake in pan for 45 minutes or until completely cooled.
- In a medium bowl, mix frosting and cool whip.
- Spread frosting over cake.
- serve well chilled.
Final Comments
*** I wasn't able to find lemon frosting in the cans, so I used a can of "Fluffy white" frosting and added lemon extract until it had a good lemon flavour, and then added some yellow food colouring.
