    List of Ingredients


    • 29 oz can pumpkin
    • 1 cup sugar
    • 1 tsp cinnamon
    • 1/2 tsp salt
    • 1/2 tsp ground nutmeg
    • 1/2 tsp ground ginger
    • 4 beaten eggs
    • 12 oz can evaporated milk
    • 1 yellow cake mix (2 layer mix)
    • 1 cup chopped nuts
    • 3/4 cup butter or margarine, melted


    Instructions


    1. Preheat oven to 350 degrees. Grease a 9x13 baking pan.
    2. In a large bowl, mix pumpkin, sugar, cinnamon, salt, nutmeg, and ginger. Add eggs.
    3. Beat lightly with wooden spoon until mixture is just combined.
    4. Gradually stir in evaporated milk. Mix well.
    5. Pour into prepared pan.
    6. Sprinkle dry cake mix evenly over pumpkin mixture. Sprinkle evenly with nuts.
    7. Drizzle with melted butter.
    8. Bake about 50 minutes or until edges are firm and top is golden.
    9. Cool in pan on wire rac.
    10. Cover and chill for at least 2 hours before serving.
    11. Store in fridge. Top with Cool Whip.
