Mexican Meatball Tortilla Soup

List of Ingredients
- 1 1/2 lbs ground beef
- 3 tbsp chopped cilantro
- 1 tbsp minced garlic
- 3 tsp lime juice
- 1 tsp cumin
- 1 tsp hot sauce
- salt & pepper to taste
- Soup -
- 2 medium onions, chopped
- 4 cloves garlic, minced
- 4 tbsp vegetable oil
- 2 4oz cans chopped green chilies
- 2 15oz cans Italian style stewed tomatoes - chopped
- 8 cups chicken stock
- 2 tsp cumin
- 1 tbsp chili powder
- 1 tsp hot sauce, to taste
- 1/2 cup all purpose flour
- 1 cup chicken stock
- salt & pepper to taste
Instructions
- Meatballs - combine ingredients and form into 1oz balls.
- Heat oil in skillet. Brown meatballs on all sides. Remove from pan and set aside.
- Soup - heat vegetable oil in large pot.
- Add onions and garlic. cook 5 minutes until translucent.
- add green chilies. cook 2 minutes
- add tomatoes with their juice, 8 cups chicken stock, chili powder, cumin, hot sauce.
- Simmer 15-20 minutes
- In small bowl, combine flour & 1 cup chicken stock until smooth
- whisk flour/chicken stock into soup and bring back to a boil.
- reduce heat and simmer 5 minutes
- add meatballs and simmer again 5 minutes.
- serve with cilantro, sour cream, cheese & soft tortillas torn into strips.
- Note - i also added chopped zucchini, corn, and some hot peppers. might add black beans next time as well.
