    Mexican Meatball Tortilla Soup

    List of Ingredients


    • 1 1/2 lbs ground beef
    • 3 tbsp chopped cilantro
    • 1 tbsp minced garlic
    • 3 tsp lime juice
    • 1 tsp cumin
    • 1 tsp hot sauce
    • salt & pepper to taste
    • Soup -
    • 2 medium onions, chopped
    • 4 cloves garlic, minced
    • 4 tbsp vegetable oil
    • 2 4oz cans chopped green chilies
    • 2 15oz cans Italian style stewed tomatoes - chopped
    • 8 cups chicken stock
    • 2 tsp cumin
    • 1 tbsp chili powder
    • 1 tsp hot sauce, to taste
    • 1/2 cup all purpose flour
    • 1 cup chicken stock
    • salt & pepper to taste


    Instructions


    1. Meatballs - combine ingredients and form into 1oz balls.
    2. Heat oil in skillet. Brown meatballs on all sides. Remove from pan and set aside.
    3. Soup - heat vegetable oil in large pot.
    4. Add onions and garlic. cook 5 minutes until translucent.
    5. add green chilies. cook 2 minutes
    6. add tomatoes with their juice, 8 cups chicken stock, chili powder, cumin, hot sauce.
    7. Simmer 15-20 minutes
    8. In small bowl, combine flour & 1 cup chicken stock until smooth
    9. whisk flour/chicken stock into soup and bring back to a boil.
    10. reduce heat and simmer 5 minutes
    11. add meatballs and simmer again 5 minutes.
    12. serve with cilantro, sour cream, cheese & soft tortillas torn into strips.
    13. Note - i also added chopped zucchini, corn, and some hot peppers. might add black beans next time as well.
