AVOCADO AND CRABMEAT

Recipe Introduction
Pop the seed out of avacados by cutting all around 'pit deep' and giving the
two halves of the avacado a twist in opposite directions. This will halve
the avacado, leaving the pit in one half. Holding the pit-half of avacado
in one hand, use the other hand to strike the pit sharply with a sharp kinfe
such as a steak knife; it will embed itself, and you can use the knife as a
lever to twist the seed out.
List of Ingredients
1 ripe avocado
6 oz fresh crabmeat from butcher, picked over, (or 1 can 5 oz)
1 rib celery, chopped finely
2 shallots, finely chopped
2 tsp mayonnaise
1 tsp olive oil
dash Tabasco (if desored)(shake it up first)
2 Tablespoons lemon juice
salt and pepper
1 pinch paprika
Recipe
Chop avocado and add the crabmeat, celery, shallots, mayonnaise, oil,
Tabasco, and lemon juice. Mix and serve in a cocktail glass over ice and
sprinkle with paprika.
