    BITE-SIZE QUICHE APPETIZERS

    1 tablespoon butter or margarine
    1/2 cup finely chopped red bell pepper
    1/4 cup finely chopped green onion
    3 large eggs
    2 tablespoons cream
    1/2 cup cheese of choice, shredded
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper

    Preheat oven to 425 degrees. Lightly butter a 24 mini muffin pan.
    Melt butter over medium heat and sauté bell pepper and onion until soft.
    Remove from heat and let mixture cool. In a bowl combine beaten eggs, cream,
    cheese, and seasonings. Add bell pepper and onions. Spoon 1 tablespoon of
    mixture into each muffin cup. Bake until the centers are set, about 8-10
    minutes. Remove from oven and let cool for 2 minutes. Using a knife loosen
    edges and remove from pan. Serve. These may also be easily frozen and many
    optional ingredients can be added.
    Makes 18 bite size quiches. Per serving: Calories 37; Protein 2 g.;
    Carbohydrates trace; Fat 3 g.; Cholesterol 45 mg; Sodium 75 mg.
