    Ham and Cheese "Sushi" Rolls

    List of Ingredients




    4 thin slices deli ham (about 4x4 inches)
    1 (8 oz) package cream cheese, softened
    1 seedless cucumber, quartered lengthwise and cut into 4 inch lengths
    4 thin slices American or Cheddar cheese (about 4x4 inches)
    1 red bell pepper, cut into thin 4 inch long strips

    Pat ham with paper towel to remove excess moisture. Spread 2 Tbsp cream cheese to edges of ham slice. Pat cucumber quarter with paper towel to remove excess moisture. Place on edge of ham slice. Roll tightly. Pressing to seal. Wrap in plastic wrap. Refrigerate. Repeat using remaining ham and cucumber. Repeat the process using cheese slices, cream cheese, and red bell pepper. Chill for 2 hours. Cut each roll into 8 pieces.
