    NOTE: This recipe shows only one serving so you must divide the carb count by
    the number of servings minus fiber.

    List of Ingredients




    1 can chunk white tuna
    1/4 cup finely diced zucchini
    1/4 cup finely diced red pepper
    1/4 cup finely diced celery
    1/4 cup finely diced green onion (scallion)
    2 tablespoons olive oil
    2 tablespoons white wine vinegar
    1 tablespoon lemon juice
    1 teaspoon basil
    Salt and pepper to taste
    1 head endive -- leaves separated, washed and chilled

    Recipe



    Mix all ingredients except the endive in a zip-lock bag. Allow to marinate at
    least 4 hours in the refrigerator. Place a heaping tablespoon full of
    mixture on each endive leaf. Arrange on platter.
