Beach Boy Pot Roast

List of Ingredients
1 beef roast -- e.g., chuck or other inexpensive cut--about 4 pounds
1 jar (8 ounce) pepperoncini peppers
slivers of fresh garlic-- to taste
Recipe
Cut some slits in roast and insert garlic slivers. Place beef in crockpot.
Dump peppers and all of the juice on top. Crock all day on low--at least 12
hours.
For serving, just slice and serve. Or, when cool, fork-shred beef, spread
on lowcarb rolls, add spicy mustard or some other lowcarb sauce of your
choice (horseradish is good, too.) Put some of the pepperoncini peppers from
the crockpot on the sandwich too.
