Beef Brisket with Garlic and Fresh Herbs

3 pounds beef brisket
1 bunch fresh thyme -- cleaned and chopped
1 bunch fresh rosemary -- cleaned and chopped
5 large cloves garlic -- mashed, or more
salt and fresh cracked pepper
olive oil
1 lemon -- juiced
Preheat oven 300 F.
In a roasting pan coat the briskit with olive oil, salt and pepper. Then
coat with thyme, rosemary and garlic. Place fat side down drizzle with
more olive oil and the lemon juice. Cover with tin foil and bake for 3 and
1/2 hours, uncover and bake an additional 1/2 hour.

NOTES : The slow cooking time mellows the flavor dramatically and
beef absorbs it. It was the most tender delicious brisket
I have ever made.
My notes: Delicious! Hands down, the best brisket I've
made. A 5 lb brisket cooked in 5 hours. Moist and tender.
