Beef Skewers with Hot Curry Mustard

Beef Skewers:
1 flank steak (2 lbs.)
1/2 cup virgin olive oil
Juice of one lime
4 cloves garlic
3 tbsp. fresh cilantro
Season with salt and pepper to taste
30 wooden skewers
Mustard Dipping Sauce:
3 tbsp. Chinese hot mustard
1 tsp. curry powder
1 minced clove garlic
1/4 cup beef stock
Beef Skewers Preparation: Yields approximately 15 (2 piece) servings -
approximately 1 net carb per serving
Slice flank steak in 1/4 inch slices. Pound each slice of beef on both sides
with a mallet. Skewer meat with 6" wooden skewers down center of slice,
alternating from back to front of meat. Marinate slices in olive oil, lime
juice, garlic, salt and pepper and refrigerate 1 hour. Preheat medium high
grill pan on stovetop. Remove sliced steak from refrigerator and grill each
in pan for approximately 30 seconds on each side and remove. Serve
immediately with mustard sauce on side. (You can prepare entire recipe with
sauce the night before then grill skewers an hour before guest arrive. Keep
them in 250 degree oven until party starts)
Dipping Sauce Preparation: Yields one batch - approximately 12 net carbs for
entire recipe
Mix hot mustard with water. Stir in remaining ingredients and refrigerate
until ready to serve. Use sparingly- it's hot.
