Cheesy Beef Bake

List of Ingredients
1 1/2 lbs ground beef
1 teaspoon prepared chili powder
salt to taste
1/2 teaspoon granulated garlic
1/2 lb fresh mushrooms, sliced
1/2 cup sour cream
1/4 cup sliced green onions, tops and white parts
1 can (6oz) Ortega brand chopped green chilies
4 eggs, well beaten
1 cup shredded Monterrey Jack cheese mixed with 1 cup shredded mild cheddar
cheese, divided
Recipe
In a heavy medium skillet over med heat, cook beef until no longer pink.
Add mushrooms and onions; cook and stir until
mushrooms have given up their water. Stir in spices, chilies, sour cream,
beaten eggs, and half of the cheese.
Transfer to a non-stick sprayed and/or greased 2-qt glass baking dish; top
with remaining cheese. Bake uncovered at 350° for 35-40 minutes. Serve with
additional sour cream if desired. 6 servings
