This is batch cooking as I love it best!
Enough to eat the night you make it, then
many meals in your freezer as well.
Meatballs are so versatile - so many
different ways to serve them that it's hard
to get tired of them.

5 lbs. ground beef (or any combo of
ground meats)
1 1/4 c. finely crushed pork rinds
2 1/2 t. salt
1 t. pepper
1 T. onion powder
1 T. garlic powder
5 eggs
Smush it all together in a big bowl (your kids will love
doing this for you). Shape into 1" balls. Arrange in
ungreased shallow baking pan, and bake at 400 degrees for
about 15 minutes or till browned.
Flash freeze the ones you're not eating right away, then
freeze in portion-sized freezer containers.
Makes about 155 1" meatballs.
