Corned beef and red potaotes

2 cups cooked corned beef brisket, chopped (about 1 pound)
1 1/2 cups cooked red potatoes (about 5-6 medium), chopped
1/3 cup onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup olive oil
Chopped fresh parsley, if desired
In 10-inch skillet, heat shortening over medium heat until melted. Spread
beef, onions and potatoes, to skillet. Cook 10 to 15 minutes, turning
occasionally with wide spatula, until potatoes are browned. Sprinkle with
parsley. Serves 2-3
