Recipe Introduction
I made a recipe called Norwegian meatballs out of my husband's great
aunt's cookbook (one she published). My husband was truly moaning over
them, then put his hands together in a motion of prayer and "worshipped"
me! Here it is, if you would like to try it.
Combine:
1 lb hamburger
2 T. flour
2 T. chopped onion
1 egg
1/2 t. salt
1/8 t. pepper
1/8 t. nutmeg
Shape into small balls and refrigerate for an hour and a half. [I
didn't do this as I didn't start dinner until 5pm and wanted to eat
before 8pm.]
Brown in 2 T. butter
Ad 2 T. flour to the drippings after meatballs are removed.
Add 1 1/4 c. beef broth
Bring to boil. Add meatballs. Let simmer an hour and a half. [Again,
I skipped this step and just poured the gravy over the meatballs on our
plates.]
I tripled the recipe for my family of 7 and there were only 5 meatballs
left over which were quickly eaten the next day by DH at lunch. The
cookbook I got this from is Vangie's Kitchen Corner by Evangeline Knowlton.
