Pizza Surprise Burgers

Recipe Introduction

Notes:
This recipe works best with beef or turkey. In Step 2, don't press balls
down into patties. Instead, make a hole that goes halfway through the center
of each ball. Put 1 tablespoon Lucerne Shredded Italian Cheese into the
hole, then fold the meat around it to close the hole. Form into a patty.
List of Ingredients
1/4 cup seasoned fine ground pork rind crumbs (substitutes for bread crumbs)
1 Large Egg
3 tablespoons pizza sauce
1 teaspoon Safeway SELECT Dijon Mustard
1/2 teaspoon onion powder
1/2 teaspoon garlic powder (or 1 teaspoon pressed garlic)
1 pound ground meat (beef, turkey, or chicken)
1/3 cup thinly sliced green onions (optional)
Cooking spray
Lettuce leaves
Tomato slices
Hamburger buns, warmed on grill or in the toaster or microwave oven
Pickles Catsup, mustard, and Safeway SELECT Mayonnaise
Recipe
1. In a 2- or 3-quart mixing bowl, use a fork or spoon to evenly mix bread
crumbs, egg, pizza sauce, mustard, onion powder, and garlic powder. Using
your hands, gently fold the meat and green onions, if using, into bread
crumb mixture.
2. When all ingredients are evenly mixed, divide meat into 4 equal portions.
Wet hands and roll each portion into a ball. Then place each ball on a plate
and press down lightly to form a patty about 4 to 5 inches in diameter.
Place in an airtight container in the refrigerator for at least 20 minutes
or up to 24 hours (refrigeration helps the patties "set" so they will hold
together better when cooking). Wash your hands thoroughly.
3. Spray each chilled patty lightly on both sides with cooking spray. Place
patties on barbecue grill over hot coals or a gas grill on medium (you'll
know it's hot enough when Mom or Dad can hold a hand at grill level only 4
to 5 seconds); close lid on gas grill. Set a timer for 6 minutes. Do not
disturb until time is up (this gives the best grill marks and browning).
Never press down on burgers with a spatula while they cook. It doesn't help
them cook faster and they will taste dry because the juices have been
squeezed out.
4. Turn burgers over (it's easier if you use two spatulas) and immediately
reset the timer for an additional 6 minutes. (If your grill has a lid, cover
it after you turn the burgers. This helps keep moisture in the meat.) If
burgers have not reached 160º after cooking for 12 minutes, continue cooking
for an additional 1 to 3 minutes until done (see "Is It Done Yet?" below).
5. To serve, place a lettuce leaf on each of four plates, then top it with a
burger (use two spatulas again to remove it from the grill) and a slice of
tomato. Place a warmed bun on each plate, garnish plate with a pickle, and
offer catsup, mustard, and mayonnaise on the side.
